Our “Castell de Gardeny” vinegars, produced by Badia Vinagres, a century-old family-run company, devoted to making artisan vinegars of the highest quality, are, in our opinion, the best we have ever tasted.  

Most of the world’s wine vinegar producers use fast, industrial fermentation systems . To our great good fortune, Badia Vinagres stuck with a slow and painstaking fermentation process, used for almost 200 years, to extract the aromas and flavours from wines carefully selected by Agustí Badia. The end result is a range of wine vinegars and some apple vinegars that have changed our perceptions of vinegar from being an ingredient to being products to enjoy in their own right.
