
These hearty chickpea burgers are a great low-calorie recipe for vegetarians. For a smoky flavour, cook these easy falafel on the BBQ then serve in warm pitta pockets with halloumi and pickled chillies.
Ingredients
- Chickpeas 2 × 400g tins, drained
- Ground cumin 2 tsp
- Ground coriander 1 tsp
- Green chilli 2, chopped
- Garlic 2 cloves
- Spring onions ½ a bunch
- Coriander ½ a small bunch
- Salt flakes 1 tsp
- Plain flour 2 tbsp
- Halloumi 1 pack, diced
- Pittas to serve
- Humous to serve (check out out fabulous recipes to make your own)
- Little gem lettuce to serve
- Pickled chillies to serve
Method
STEP 1
Put the first 9 ingredients in a food processor and whizz until broken down. Tip into a bowl, mix in the halloumi, and form into 6 burgers. You can either cook these in a frying pan with a little olive oil until golden or BBQ for 2-3 minutes each side (just brush with oil beforehand to stop them sticking).
STEP 2
Serve in grilled pittas with humous, lettuce and pickled chillies.
