Steak and Chickpea Salad with Harissa Yoghurt Dressing

Ready in just 15 minutes, this steak and chickpea salad with harissa yoghurt dressing is low in fat and GI. A speedy, healthy salad to get you through the week.

Ingredients

  • Chickpeas 400g
  • ½ small, sliced
  • Cherry or tomatoes 100g, halved
  • Flat-leaf parsley a small bunch, chopped
  • Sirloin or your favourite cut of steak about 200g, trimmed of all fat
  • Natural or low fat yoghurt 150ml
  • Harissa 2 tbsp

Method

STEP 1

Toss together the chickpeas, red onion, tomatoes and parsley. Season the steak well and cook for 1½ minutes each side then rest for 5 minutes. Mix the yoghurt with the harissa and a splash of water. Slice the steak, toss with the chickpeas and serve drizzled with the yoghurt.
