Tomato and Feta Salad

This recipe for marinated tomato salad with feta cheese makes a quick and easy vegetarian meal for two midweek. It also makes a tasty lunch to take to work.

Ingredients

  • Olive oil 3 tbsp
  • Sherry vinegar 2 tbsp
  • Caster sugar 1 tsp
  • Red onion ½, thinly sliced
  • Vine tomatoes 6, thinly sliced
  • Feta 100g, crumbled
  • Olives 10, pitted
  • Mint a few leaves, torn
  • Pitta breads 2, warmed

Method

STEP 1

Whisk the olive oil, vinegar and sugar together. Stir in the onion, and season. Put the tomatoes on 2 plates then divide the dressing and onion between them. Leave to sit for 10 minutes then top with the feta, olives and mint. Serve with warm pittas.
